Healing Stir-Fry

We've been sick a lot since we moved back to camp and the semester started. It seems like there is a bug that just keeps getting passed around the students and the other families that live here. Inspired by the delicious Seriously Healing Soup recipe that I found at Nourishing Days, I created a new side dish that we've been calling Healing Stir-Fry.

I know this has a massive amount of garlic in it but don't run away screaming... it really isn't overly garlicky, I promise. Just give it a try. I call it "healing" because garlic and thyme are both really helpful when you are sick. Garlic is a powerful anti-viral, anti-fungal, and antibacterial, and thyme is helpful for treating coughs, congestion, and colds (you can see more about the medicinal uses of common culinary herbs here).

Healing Stir-Fry

2-3 tablespoons lard, oil, ghee, or butter
2 medium onions, halved and cut into half-rings
1 whole head of garlic, each clove cut into thin slices
1 red bell pepper, cut into thin strips
1 large carrot, cut into thin strips
2 tablespoons thyme
pinch of salt and pepper

This is so seriously simple. All you do is cut everything up, throw it all in a skillet, and sauté until the carrots are tender, stirring frequently (around 10ish minutes, I think). Enjoy!
